I love this Tomato Salad with Cucumbers, Avocado, and Cilantro, and it’s the cilantro and the lime dressing that makes this a wow for me. This recipe is great for cilantro lovers like me, but see tips in the recipe if you’re not a cilantro fan.

This perfect Tomato Salad with Cucumbers, Avocado, and Cilantro is one of my favorite ways to enjoy tomatoes when they’re garden fresh in the summer months! This is a salad combination I came up with years ago when I had lots of fresh, ripe tomatoes in the garden, and when a neighbor stopped by I shared the salad with her and we both devoured it. I’ve been making the salad ever since, and when I made it recently I decided I had to take some new photos!
If you’re lucky enough to have fresh garden tomatoes and cucumbers, this salad is a perfect way to use them when they’re abundant! But even now that I have to buy tomatoes at the Farmers Market or at the store, this is still an amazing summer salad I make every year. I hope you’ll try it if you like these ingredients; see tips below for a version without cilantro.

I’ve been blogging long enough to understand that cilantro really does taste bad to some people, so if you’re not a cilantro fan you can definitely make this salad and substitute a smaller amount of thinly-sliced green onion for the cilantro. Or I’d also recommend this tomato salad with similar ingredients and no cilantro in sight.
How low in carbs is the tomato salad with cucumbers?
This perfect summer salad only has about 8 net carbs per serving. That calculations is based on a fairly generous serving size too, so you could make the salad stretch for 5 or 6 servings if you wanted fewer carbs. Or if you wanted a lower-carb version for Keto I would use more cucumbers and fewer tomatoes.

How to make Tomato Salad with Cucumbers, Avocado, and Cilantro:

- Start by cutting up the tomatoes and letting them drain for a few minutes in a colander.
- Dice up the avocados, toss with 1 tablespoon lime juice, and season with salt.
- Cut up the cucumber into bite-sized pieces. I peeled strips off these European cucumbers, but if you have fresh garden cucumbers peeling is definitely optional.
- Coarsely chop a generous amount of cilantro.
- Whisk together the lime juice, olive oil, Spike Seasoning (affiliate link) or other all-purpose seasoning blend. and Vege-Sal (affiliate link) or salt to make the dressing.
- Gently combine the avocado with the tomatoes and cucumbers, and stir in the dressing.
- Then stir in the chopped cilantro, season to taste with salt, and serve.
- I would eat this for a light summer lunch, but it’s also perfect for a side dish salad with any kind of grilled meat!
- The salad will keep one night in the fridge but it won’t last much longer than that.

Tomato Salad with Cucumbers, Avocado, and Cilantro
Tomato Salad with Cucumbers, Avocado, and Cilantro is a perfect summer lunch, and it's chopped cilantro and lime vinaigrette dressing that makes this one of my favorites!
Ingredients
Ingredients:
- 3 cups diced tomatoes, cut into bite-sized pieces
- 2 cups diced cucumbers in bite-sized pieces
- 2 small avocados, diced into bite-sized pieces (more or less to taste)
- 1 T fresh squeezed lime juice (to toss with avocado)
- Vege-Sal or salt to taste (for seasoning avocado)
- 1 cup chopped cilantro (use more or less to taste; use thinly sliced green onion if you’re not a cilantro fan)
Dressing Ingredients:
- 2 T fresh squeezed lime juice
- 1 T best quality extra virgin olive oil
- 1/4 tsp. Spike seasoning (see notes)
- salt to taste (I used Vege-Sal, but sea salt would be great here)
Instructions
- Cut up tomatoes and put them in a colander placed in the sink to drain for a few minutes.
- Peel avocado(s) and cut into 1/2 inch pieces
- Put avocado pieces into non-metal bowl and toss with 1 T lime juice. (Use a bowl big enough to hold the finished salad.)
- Season avocado generously with salt.
- Chop cucumbers into bite-sized pieces, peeling off thin strips if the peel is thick. (Fresh garden cucumbers won’t need to be peeled.)
- Coarsely chop cilantro.
- Whisk together 2 T lime juice, olive oil, Spike seasoning, and Vege-Sal to make the dressing. (This salad has a lot of lime flavor, so if you're not such a fan of lime you might want to use slightly less lime juice.)
- Combine tomatoes and cucumbers with the avocados and gently stir in the dressing.
- Then stir in the chopped cilantro, season with more salt if desired, and serve immediately.
- This salad isn't bad after one night in the fridge but it won't last much longer than that.
Notes
I love Spike Seasoning (affiliate link) but you can use another all-purpose seasoning blend if you don’t have Spike.
Amounts of each ingredient can be adjusted to taste.

Hi Kalyn. I don't know if I left a comment in the past about this wonderful recipe. I make it often,either using it over a salad or a salsa dip. I haven't made the dressing yet because it is so good without it I don't go any further. Avocados are so good for us so it's extra special knowing that we are eating something very healthy. I never had it with cilantro. That's sounds delicious. It looks like I'll be running to the store. I can't understand why people think it's too expensive to eat healthy. It's more expensive to have bad health.

Made this the other day with a few adjustments due to what I had on hand. I only had 1 cucumber, but added a 2nd avocado. I didn't have any limes, so I used lemon juice. And I had 1/2 ear of grilled corn which needed using up so I added that and a can of rinsed black beans for some protein. It was delicious! I can't wait to make it with the lime juice as I just know that will be even better :O)

Really gorgeous colors! I love this combination too. Lately I’ve been using leaves of Romaine to scoop up dips and salads in lieu of bread or tortilla chips. I think this would be that way too.

I am not a cilantro lover but I would eat this with parsley or basil quite happily. I wanted to say thanks for looking out for the vegetarians – I can look at recipes and think about them without the meat or fish but it is so nice not to have to do creative somersaults in my head!
